In the past, one of my husband's food staples was a gluten free, nut free, oat free granola made by Enjoy Life. Sadly earlier this year they discontinued this incredibly unique product. After buying whatever stock we could find across the city, eventually we ran out. I searched for a similar alternative, with no success.
This lead me to the decision to create my own recipe and start making my own from scratch. Turns out my husband likes my recipe better! So, I am sharing my recipe, in hopes that maybe it can help other gluten free granola fans!
1.5 cups brown rice flakes
1 cup quinoa flakes
1/4 cup Enjoy Life crunchy rice cereal
1/4 cup Bob's Red Mill brown rice hot cereal
1/2 cup olive oil
1/2 cup honey
1 tbsp brown sugar
1 tsp cinnamon
1 tsp salt
3/4 cup raisins (added after baking)
Preheat oven to 300 degrees (I used the bake setting on a convection oven).
Measure and add all ingredients (except raisins) to a bowl.
Spread onto two cookie sheets lined with parchment paper.
Bake for 10 minutes.
Remove from oven and flip / mix granola. (This is important or underside will get too brown).
Bake for another 10-15 minutes.
Remove from oven to cool. (It will appear that granola is still moist, but as it cools it will harden and stick together. )
Add raisins and mix.
Store in container.
*Recipe can easily be doubled and piled thicker on cookie sheets. Just cook a bit longer. Cooked granola can also be stored in freezer, and in fact is very yummy like this!
